My Mom used to make this cabbage soup when I was younger. I loved it!
Which is something since my Mom really wasn't a great cook, like my Dad but she tried. My younger siblings don't remember the soup, so must not have been one of their favorites. Well I made my own version of it and it cam out excellent.....{J} had 2 big bowls. Here is my recipe:
Helena's Polish Cabbage Soup
1} Half a head of a large cabbage, sliced up
2} 2 onions,sliced but not too small
3} 5 garlic cloves...{ I love garlic, so more or less is OK}
4} 2 cans fat free Chicken broth {28oz total}
5} 1 can of Hunt's Petite diced tomatoes {140z.}
6} 8 0z each of Velveeta cheese, 1 plain, 1 Pepper jack cheese
7} 3 cups water
8} optional : I threw in a cup of corn, a cup of green beans {frozen}
Cook until cabbage is tender, Put in the cheese last.
If any one makes it let me know what you think, It definitely was a favorite in my house. It has a little bite to it with the Pepper jack cheese.

I am lucky I have a great butcher here at the local Price Chopper. But If I was you I would find a butcher, or a farm that harvests its beef, and I am sure there is some Organic places out there. Not knowing where you are located all I can do is guess of places. Have you tried Jenny Craig,,,not joking but they do have meals, also Omaho meats. Hope that helps.
